Synbiotic yogurt is a combination of probiotics and prebiotics. Red dragon fruit peel extract contains 10.79% pectin, which can be used as prebiotic. Dragon synbiotic produces an unpleasant aftertaste. The addition honey improve the functional properties yogurt. purpose this study was to determine emulsion with evaporated red sweetener. This research conducted at Laboratory Animal Products Technology, Faculty Husbandry, Universitas Brawijaya. material probiotic yoghurt, yoghurt (Hylocereus polyrhizus) 20% made from 10% skim milk starter containing Lactobacillus bulgaricus Streptococcus thermophilus (1:1), 2% synbiotic. method experimental completely randomized design treatment T1 = T2 fortified T3 + honey, 3 replications (v/v).The data obtained were analyzed using analysis variance (ANOVA), if test results showed difference, then Duncan (DMRT) carried out. that adding sweetener did not result in significant difference (P>0.05) stability or turbidity but activity. It concluded evaporation affected properties.
